Production Area:It is obtained from Negroamaro and Malvasia nera grapes, cultivated in those Apulian lands which are particularly suitable for this kind of wines and particularly in Salento's territory (provinces of Brindisi and Lecce).
Type of grapes:Negroamaro (85%), Malvasia nera from Brindisi (15%)
Type of vineyards' cultivation and medium density:Apulian sapling and counter-espalier with about 4.150 plants/each hectar for a total amount of 83.000 buds.
Vineyards' average age:60/70 years
Production for each hectare:700/800 kg.
Harvest-time :15th -30 th September.
Harvest-method:By hand with immediate transport into the wine vault.
Technologies:Negroamaro grapes are pressed in a soft way and then they remain in contact with must for a very short time which is sufficient in order to obtain the correct pink shade of the finished product. The must is cleaned by impurities and is fermented at a controlled temperature with selected leavens' aid.
Packaging and boxing:Bordeaux bottle whose colour is half white, boxes with 6-12 bottles of 75 cl.
Alcoolic degree: 12,50%
 
ORGANOLEPTIC FEATURES:
Colour:Coral pink colour with typical shades of soft cerasuolo.
Scent:Light, fruity, delicate scent which becomes characteristical if the wine is young.
Taste:Dry, harmonical, pleasantly slightly sour taste.
Gastronomic combination:Because of its sobriety (it is both a full-bodied and lively wine), it is an ideal wine for each course: from the simplest to the most sophisticated ones.
Service:It is better to serve it fresh (8-10° C)
